Air India, which has embarked on a major makeover, has introduced a new menu for its domestic and international flights,  including international and local Indian cuisine.

The airlines, which often received flak for the food it served inflight, has introduced a revamped menu favouring the healthy eating trend. Besides a whole lot of gourmet meals, a wide range of appetisers and desserts too feature in the menu.

The menu on Air India domestic consists of both international and Indian food options with mixed vegetable paratha, achari paneer, murgh rezala kofta, murgh elaichi korma, chicken chettinad kathi roll, masala dal and brown rice khichdi with sprouts, classic tomato and coriander shorba with crisp namakpara etc.

The domestic flights also feature international cuisine, including mushroom scrambled egg, turmeric chilli omelette, emmenthal sandwich in multigrain bread, grilled prawns in a fennel cream sauce, classic chilli chicken, baked fillet of fish, roast tomato and bocconcini caprese with kalamata olives and pesto, among others.

Sandeep Verma, head of inflight services, Air India, told The Economic Times that the airline has brought great thought and energy into the new menus. "Our underlying focus while designing the new menus has been on ensuring that they include nutritious options that are delicious, and on incorporating contemporary, sustainable practices," he added.

Not just the domestic menu, even the international menu has changed on all international flights (exiting India), based on guest feedback.

Besides desi cuisine which includes vegetable paratha and brown rice khichdi, the menu also includes international dishes including mushroom scrambled egg, turmeric chilli omelette, emmenthal sandwich in multigrain bread, grilled prawns in a fennel cream sauce, classic chilli chicken, baked fillet of fish, roast tomato and bocconcini caprese with kalamata olives and pesto, among others.

The vegan options include subz seekh kebab, Thai red curry with tofu and vegetables, broccoli and millet steak, lemon sevaiyan upma, medu wada and masala uttapam.

While there is a whole variety of desserts, including khajur tukda with kesar phirni, the menu also features an extensive beverage menu including virgin mary, california orange and apple spritzer.

As for drinks, a range of premium brands of spirits as well as a special wine list that includes fine French and Italian wines, are available.
